ANA competition for young UK chefs to develop in-flight menu

ANAANA, Japan’s only 5-star airline, is to offer young UK chefs the exclusive opportunity to contribute to its Winter 2016 in-flight menu and experience a culinary tour of Japan, as part of an exciting new collaboration with the British Hospitality Association (BHA) to inspire young people working in the UK’s hospitality industry.

Seven Samurai Chef Tour

ANA has announced that it is supporting the BHA’s Seven Samurai Chef Tour, which is designed to discover the best up-and-coming chefs in the UK hospitality industry. To enter, chefs, with at least two years’ kitchen experience in a hotel or restaurant at chef de partie or sous chef level, must design and submit a photo of a signature dish, with a supporting endorsement from their Head Chef or supervisor.

The seven successful finalists will win a trip to Japan to experience the secrets of Japanese cuisine through an immersive culinary tour of the country.

One of the Samurai Chefs will be awarded the opportunity to collaborate with ANA’s award-winning catering team to inspire and create a light meal for its Winter 2016 Business Class in-flight menu on ANA’s London Heathrow – Tokyo Haneda route.

ANA building on its culinary reputation

Building upon on its reputation for creating the finest culinary experiences in the skies, ANA is now aiming to support the potential of young chefs working to make their own mark in the industry. The airline is already renowned for its “THE CONNOISSEURS” offering, a panel of 25 premier chefs, sommeliers, oenologists, and sake specialists.

The winners’ seven-day tour of Japan has been created to educate and inspire the chefs, showcasing the best in the country’s famous cuisine, with opportunities to experience the unique, local production methods behind various delicacies like soy sauce and ponzu, a sauce made from soy sauce and yuzu.

In Tokyo, they will visit the famous ‘cookery gadget street’ and world’s largest food market, before moving on to Toba City in Mie prefecture, one of the initiative’s sponsors and also one of the three Japanese prefectures to supply its produce to the emperor’s kitchen during ancient eras. The tour will also include a trip to Osaka and Kyoto.

It’s part of the BHA’s ongoing programme to inspire the next generation of hospitality professionals.”

How to enter

The competition opens today (12 October) and will run until 25 November 2015. The judging panel will include Hideki Maeda, Head Chef of world-renowned Japanese restaurant Nobu and Japanese Chef Yuki Gomi, alongside ANA’s Senior Vice President, EMEA and General Manager, London and the Chief Executive of the BHA. They will announce the winning seven ‘Samurai chefs’ in early December.
