West London gastropub, Paradise by way of Kensal Green, has appointed Cat Ashton as its new Head Chef. Paradise is part of The Columbo Group, the popular group of restaurants, bars and nightclubs, owned and operated by Steve Ball and Riz Shaikh.
Prior to Paradise, Ashton held the position of Head Chef at Petersham Nurseries (February 2013 to April 2014), following the departure of Skye Gyngell, to whom she was Sous Chef for an additional year previously. Ashton also brings experience from her native Australia, including Momo and Atomica Café, Melbourne, as well as a stage at The Kitchin, Edinburgh, and PortSide Parlour, Hackney.
Ashton will oversee the menus across the expansive property, including the 100-cover newly refurbished dining room, front bar and 30-cover private dining room. Bringing contemporary European flavours to the food offering, Ashton looks forward to evolving the restaurant’s culinary programme, while continuing its commitment to thoughtfully sourced, high quality and honest food, for which it is already well known.
Ashton will introduce dishes such as ‘Stinging nettle and ricotta ravioli with Sicilian olive oil’, ‘Baby monkfish wrapped in prosciutto, pearl barley risotto with wild garlic & spinach’ and ‘Slow roast lamb shoulder with parsnip puree, Swiss chard & red wine jus’. ‘Pressed chocolate cake with honeycomb and crème fraiche’ and ‘Sticky toffee pudding with vanilla ice cream’ will feature on the pudding menu.
Additionally Ashton will put her stamp on the Sunday roast menu, for which the dining room is renowned. Newcomers to the bar menu include ‘Hummus with hazelnut dukkah pitta & raw veg’ and ‘Cod croquettes with caper & lemon mayo’.
